Soy Beef Canton Casserole
2 tablespoons EVO
1 pound soy beef
1 green pepper, chopped
2 cups chopped celery
1/2 cup chopped onion
8 oz mushrooms sliced
1 cup soy milk
1 tablespoon soy sauce
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon parsley flakes
3 tablespoons butter or margarine
1/3 cup chopped almonds
1 cup dry bread cups
In large frying pan, combine cooking oil, soy, green pepper, celery and onions. Scramble-fry until soy is brown. Add mushrooms to meat mixture. Stir in milk. Add soy sauce, salt, pepper and parsley flakes. Mix well and pour into 1 1/2 quart casserole. Melt butter in small saucepan. Add almonds and crumbs. Stir to coat. Sprinkle over top. Bake uncovered in 350 F oven for 40 to 50 minutes.
