Salmon Patties Sweet and Sour
For salmon patties :
2 filet of salmon
1 tbsp. of finely minced garlic
1/2 c. of finely chopped red onions
1 red bell pepper chopped
1 tbsp. of finely chopped parsley
1 tsp extra virgin olive oil
1/2 c. of whole wheat matzo meal
beaten egg
salt and pepper to taste
cooking oil spray
For the sweet and sour sauce :
1 c. of catsup
1/3 c. of vinegar
3/4 c. of light brown sugar
2-3 dashes of soy sauce
1 tsp. of sesame seed oil
1 tbsp. of corn starch
salt and pepper

Fry your salmon filets until thoroughly cooked and flake them in the pan having simply used your cooking oil spray. Empty the now cooked salmon into a large mixing bowl for the next step to create patties. Mince garlic, chop red onions, add chopped parsley, and red pepper to the salmon, and then add olive oil, whole wheat matzo meal, and an egg to create a pancake like mush along with salt and pepper to taste. Make balls that are patted down onto your frying surface, to be flipped when browned. For the sweet and sour sauce, combine all ingredients, and remember that sesame seed oil is very pungent, so you only need a little. Heat ingredients in a sauce pan, gently stir corn starch to thicken. Sesame seeds can be pan roasted dry if you watch them carefully to give a little extra crunch. Either dip the salmon patties in them, or add to sauce. Serve over rice.
