Salmon Crusted
6 6 oz filet of Salmon
1 Tbsp. Cajon Seasoning
1 Tbsp. Paprika
1 Tbsp Black Pepper
1 Tbsp Ground Coriander
Dried Thyme
1/2 Box of Crispy Rice Cereal
3 Egg Whites
1 Tbsp of Olive Oil
2 Tbsp of Butter

To begin add Cajon Seasoning, Paprika, Black Pepper, Ground Coriander and Dried Thyme to a medium sized bowl. Next pour Crispy Rice Cereal to a food processor and pulse two or three times. You don't want it to become dust but you do want the Rice cereal in smaller pieces. Next, pour the cereal into the medium sized bowl with the other seasoning. Now stir to mix all the ingredients together.

Take three egg whites and whisk them together lightly in a small bowl. Next take your salmon filets and dip into the egg whites and then place in the seasoning bowl. Give the bowl a few good shakes so that the salmon filets are coated. Next take a frying pan and add 1 Tbsp of olive oil and place over medium heat. Then, take your coated salmon filets and place in the pan turning every few minutes or so. After the salmon is brown on both sides add 2 Tbsp of butter and use it to baste the fish. When the fish is done place on some absorbent paper to absorb the excess oil. The fish is now ready to serve.
