Angel Hair Asian Salad
3 c coarsely chopped bok choy
1 c julienne-cut carrots
1 c snow peas
1/2 c hoisin sauce
1/4 c rice vinegar
1/4 c low-salt soy sauce
1 tb minced fresh ginger
1 tb dark sesame oil
4 c cooked angel hair pasta;
-~8oz uncooked
1 c diced cooked turkey;
1 c green onions
4 tb toasted sesame seeds
Cook bok choy, carrot, and snow peas in boiling water 1min. Drain; rinse under cold water. Drain well; let cool. Combine hoisin sauce, rice vinegar, soy sauce, ginger, and sesame oil in a large bowl; stir well. Add bok choy mixture, pasta, turkey, and green onions; toss well. Sprinkle with sesame seeds. Serve a room temp or chilled.
