Cake Olive Oil
3 eggs
1 ¼c each Splenda and Brown Sugar
1 cup extra-virgin olive oil
1-1/2 cups milk
Juice of 1 lime or ½ lemon (both option)
cinnamon optional
1 c each-whole wheat and better for bread flour
1/2-tsp. baking powder
1/2-tsp. baking soda
pinch of salt
confectioners' sugar for dusting

Spray a 12-inch cake pan. Bake at 350F.
In a large bowl, whisk together the eggs and granulated sugar until blended. Add the olive oil, milk and lime juice and mix well. In another bowl, stir together the flour, baking powder, baking soda and salt. Add to the egg mixture, stirring until just blended. Do not over mix. Pour the batter into the prepared pan.
Bake until a toothpick inserted into the center comes out clean, 50 to 55 minutes. Remove to a wire rack to cool completely. Loosen the sides with a knife and invert onto a serving plate. Dust the cake with confectioners' sugar and cut into 12 slices.
