BBQ VEG Sloppy Joe
1 tablespoon EVO oil
1 medium onion, chopped
1 green pepper, chopped
3 cups cooked brown rice
2 16-ounce cans Mexican style pinto beans
3 soy burgers cooked and crumbled
3/4 cup hickory smoke barbecue sauce
4 to 6 whole grain buns
Heat oil in large skillet over medium-high heat. Add onion and green pepper; cook 2 to 3 minutes. Add rice, beans, crumbled burger and barbecue sauce. Simmer 10 to 15 minutes, until heated through. Serve on buns. Makes 4-6 servings. Hickory BBQ Sauce:
1/3 cup beer
1/4 cup red wine vinegar
3 tablespoons catsup
2 tablespoons vegetable oil
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon liquid smoke
1/4 teaspoon ground red pepper
PREPARATION:
Stir ingredients together in a small saucepan. Bring to a boil and simmer 5-10 minutes.
