Banana Bread

1/2 c EVO oil
1 1/2 c brown sugar
2 eggs; well beaten
1/4 ts salt
¾ c Better for Bread flour
¾ c Whole Wheat flour
1 ts baking soda
1/3 c buttermilk or sour cream
3 ripe bananas; mashed
1 c walnuts or pecans (Substitute crushed cheerios for lower fat)

Cream oil & sugar. Add eggs & salt & mix well. Add flour & soda combined
with buttermilk alternately. Add bananas. Fold in nuts. Grease 2 loaf pans.
Pour in mixture & bake about 45 minutes at 350. Makes 2 loaves.
