Chicken Baked Apricot
10 oz apricot or peach preserves (1 cup)
1/4 c lemon juice from concentrate
2 ts soy sauce
1 c dry bread crumbs
1/4 c EVO
3 lb chicken pieces
Preheat oven to 350 F. In shallow dish, combine preserves, lemon juice and
soy sauce; mix well. Coat chicken with preserves mixture, roll in bread
crumbs. Reserve remaining preserves mixture. In greased 13x9" baking dish,
arrange chicken; drizzle with EVO. Bake 1 hour or until tender. In small saucepan, combine remaining preserves mixture; heat
through. Serve with chicken
