Roast Chicken

1 3-4 lb Cornish Hen
Roasted Garlic
Spice Rub


Place chicken in a shallow roasting pan and roast at 350° for about 20 minutes per pound, after coating it with extra virgin olive oil, roasted garlic, and your favorite spice rub.
